yesterday i made my famous chunky monkey banana bread, which is a family favorite in my house especially with the kids. so i really should have known better then to leave the loaf right on the counter to cool while i finished some other house work, when i made my way back to the kitchen, i notice the bread was gone!! a trail of crumbs lead me to Williams room where i found him and Ivy feasting away. William even brought a butter knife with him and was hacking through it trying to cut pieces off for Ivy and himself. it was mostly crumbs at this point! its a good thing Shawn and i are counting our calories, and one slice of this bread is 100 cals, other wise i would not have seen it as a favor by removing the temptation!

for those who might be interested here is the recipe:
pre-heat 350
1 3/4 cups flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1-2 tsp cinnamon
1 tsp pumpkin pie spice
(mix all in a medium bowl) set aside
1 egg
3 large bananas
1 cup sugar
1/4 cup cooking oil
1 tsp lemon zest (optional)
(in kitchenAid mix till wet and gooey with large lumps of banana)
add dry ingredients till moist should still be pretty lumpy!
pour batter into a greased loaf pan and bake for 50 minutes or so till center pulls out clean.
leave in pan about 5 -10 mins, then remove from pan and let cool on wire rack. when cooled slice and enjoy!
